Dial-in basics

How to dial in espresso

Make one change at a time, taste the result, and keep notes on dose, yield, time, and grind. The goal is a repeatable cup that tastes sweet and clear, not a perfect number on a recipe card.

Start with the ratio

Begin around 1:2, such as 18g in and 36g out. A shorter yield feels heavier; a longer yield can bring more clarity.

Use grind for extraction

Sour shots usually need more extraction, so try finer. Bitter or harsh shots often need less extraction, so try coarser or stop sooner.

Change one variable

Keep puck prep consistent and change one small step at a time. That makes the next shot easier to understand and repeat.
